To begin with, it must be emphasized that the atmosphere of the restaurant strikes upon entry. Instead of a stark canteen style, Bugis Kitchen presents itself in a flamboyant light with decor that is both chic and modern. The restaurant is adorned with mirrors that visually enlarge the space, creating an illusion of a mini ballroom, framed by refined glass chandeliers. This stunning decor choice is somewhat out of sync with the restaurant’s cartoon logo, infusing an unexpectedly sophisticated touch.

Chef Wee Kiong Tee, better known as Billy to British customers, has designed a menu that highlights iconic dishes of Singaporean street food, but reinterpreted to a higher gastronomic level. This promises a reinterpretation that awakens our taste buds. While waiting for our order, we could not resist the temptation of a Singapore Sling cocktail and a glass of chardonnay to elevate the ambiance.

To start our meal, we opted for the classic chicken satay, considered one of the most cherished Asian street foods. Billy proudly assured us that his satay sauce is unique, crafted from no less than 20 ingredients. This sauce, although evident by its peanut base, offers an unforgettable flavor, delightfully spicy. The chicken was perfectly grilled, accompanied by cucumber, onions, and a creamy peanut sauce.

We also enjoyed Mongolian prawns, light and crispy, prepared with a sweet and sour sauce balanced by a hint of tamarind and black pepper. Each dish was an ode to the delicacy and richness of Asian flavors, transporting us to a refreshing culinary world.

For the main course, I chose the Hainan chicken, a staple that never disappoints. My dining companion, on the other hand, chose the Beef Rendang, braised with coconut milk and spices, which also delighted our taste buds.

Even though we were satiated, it was impossible to work our way past the fried bananas without giving in. It’s one of those Asian sweets that is hard to resist. And I do not regret it; each bite was a true delight.
